Spur Defense Joins Central Texas Wildlife Legacy for a Chef’s Table Experience at Ling Kitchen

Central Texas Wildlife Legacy is a nonprofit organization dedicated to preserving the traditions of hunting, conservation, outdoor recreation, and wildlife stewardship for future generations. Through scholarships, educational programs, charitable initiatives, veteran support, and conservation-focused events, the organization has made a significant impact throughout Texas. Over the years, Central Texas Wildlife Legacy has provided educational assistance, supported local charities and veterans, and hosted numerous events that bring together sportsmen, conservationists, and community leaders who share a passion for protecting our outdoor heritage. Recently, we had the privilege of attending an exclusive VIP dinner hosted by Central Texas Wildlife Legacy at the Chef’s Table at Ling Kitchen in Austin, Texas. The evening brought together sponsors, supporters, and advocates who are passionate about protecting the traditions that connect us to the outdoors.
The event provided an opportunity to network with fellow supporters, discuss our second ammendment rights, and enjoy one of the most unique dining experiences we’ve had in Central Texas. It’s safe to say, this Michelin recommended meal did not disappoint.

A Culinary Journey Through Ling Kitchen
Ling Kitchen curated a remarkable multi-course tasting menu that showcased a blend of traditional Chinese cuisine, premium ingredients, and creative culinary artistry.
Water Lilies Goldfish Soup

The evening began with Water Lilies Goldfish Soup, a beautifully presented soup dish that set the tone for the experience. The fish dumplings were stuffed with perfectly seasoned lobster and pork. Elegant, flavorful, and visually stunning, it immediately demonstrated the attention to detail that Ling Kitchen is known for.
Angry Birds

One of the most creatively named dishes of the evening, Angry Birds, offered a unique presentation of chicken and shrimp bite size appetizers, paired with a delicious sauce that kept guests talking long after the course was finished.

Peking Duck Three Style

A true highlight of the night, the Peking Duck Three Style showcased the versatility of one of China’s most celebrated dishes. This sushi inspired dish featured mouth watering flavors of cucumber and caviar. Each preparation offered a different texture and flavor profile, creating a memorable tasting experience.
Crispy Pork Belly
We didn’t manage to capture a photo of this course, it quickly disappeared.
Perfectly prepared with a crisp exterior, curated sauce, and tender, flavorful meat, the Crispy Pork Belly showcased the balance of texture and technique that made the entire dining experience at Ling Kitchen so memorable.
Lobster Tail with XO Sauce

Premium lobster paired with rich XO sauce delivered one of the evening’s most luxurious courses. The combination of seafood and savory umami flavors was exceptional.
Fresh Honeycomb

Ling’s servers offered fresh honeycomb at this time. This naturally curated blessing from the bees was a treat
Mochi Ice Cream with Red Bean Sauce

This pallet cleanser was a refreshing interlude before the end half of this meal curated for some of Central Texas’ elite hunters. The green tea mochi shavings were topped with a red bean sauce and a squab (pigeon) wing.
Oolong Tea Smoked Squab

This was my personal favorite dish of the night in terms of the presentation. Served in a closed box, once one opens this treasure they are first met with a smoky aroma. This unique dish featured delicate smokiness from the oolong tea preparation, creating a flavor profile unlike anything most guests had experienced before. It also featured a 24K coated, boiled squab egg atop a bed of crispy onions.
Tilefish with Asam Sauce

Fresh tilefish paired with vibrant asam sauce offered a refreshing contrast to the previous courses and highlighted the chef’s ability to balance flavors throughout the meal.
Pan Seared Wagyu Beef

For many guests, this was the centerpiece of the evening. The Wagyu beef was expertly prepared, delivering incredible tenderness and rich flavor that exemplified why Wagyu is considered one of the finest cuts of beef in the world. The sides consisted of jellyfish that was surprisingly tasty, and crispy dumplings that hit the spot.
Bitter Melon Seafood Rice

Just when we thought we couldn’t take another bite, the final savory course brought together seafood, squid ink rice, and bitter melon in a dish that balanced texture and flavor beautifully while paying homage to traditional culinary influences.
Dessert

No exceptional meal is complete without dessert, and Ling Kitchen finished the evening with a sweet mochi ending that perfectly capped off an unforgettable dining experience.
